Picked up half a bone in turkey breast at the grocery store. Trimmed off the wing flaps and excess skin to make stock for gravy. Just a simple marinade of extra virgin olive oil, lemon juice, chopped garlic, green onion, oregano, marjoram, basil, and brown sugar. Seasoned the breast with Kosher salt, coarse ground pepper, red pepper, and a little cumin. Let the turkey marinate a bit Added some sumac to the bird for a little more tang. Now for the sear on this beautiful evening Time to put on the inderect side and let finish smoking Timed it just right. I used the feel touch instead of a therm. this time.Looks good to me. Had fresh fig and zuke kabobs, raosted spuds, and ciabata bread. Oh and the gravy. All was yum ;D-JimZ
