It looks good to me but it looks different inside from the boudin that I have had. That looks more like a found meat sausage. They must be made a bunch of different ways.

I've only had boudin once so my experience is limited... ;D
The stuff I had seemed more like they precooked the pork, pulled it, mixed with with rice and seasoning and stuffed it. It had a much different texture than a normal ground pork sausage.
Im sure there are many different ways its made. Like I said it definitely looks good though.
