Do not get jealous Ken! Sunday cooked a nice fresh pork picnic on the grill. This is one of my favorite cuts of pork roasts. Got piggy prepped. Made a rub of Kosher salt, black pepper, fresh ground nutmeg, cumin, garlic powder, and white sugar(ran out of brown sugar). Scored the skin and stuffed with garlic. Scoring the the skin makes all the little squares get nice and crispy. Time to get the pig seared on all sides After two hours took off the grill and put in a 375deg over to get all the skin crispy and cook till 165deg. Had the new spuds out the yard and some zuke kebas First time I used white sugar. Even though every thing looked burnt and I thought I messed up there was no burnt taste, thank goodness. However as a GERD sufferer I new I should not eat all that crackling before the meal, but that is my favorite part. Man it was good as the rest of the meal. Yum -JimZ

Closer to 30yrs Key. Mr Cast Aluminum has been my friend for a long time. The left over pork tonight was very good. Going to make stock out of the bone. The Piggy Rules ;D ;D ;D-JimZ
