Picked up a eye of round roast Saturday for the grill. One of my favorite cuts of beef that I have not cooked in a while. I cut off about a 1 1/4# cubes for kebabs latter. Stuffed with plenty of garlic and rubbed the out side with Kosher salt and course ground black pepper. Then time to slather on some JimZ Serrano Pepper Hot Sauce. Well you know I have to get a bell pepper on the pecan wood for roasting while Mr eye of Round is waiting it's turn All done. Cleaned, sliced, and in a bowl with salt, pepper, olive oil, and red wine vinegar I think the roast is loosing patience and wants to go on Getting the roast seared on all sides before moving to inderect side of grill. Can not tell if it is standing on it's head or sitting on it's ars. Looking good almost ready to come off This is what I sliced up last night for sammies and from the yard string beans for dinner Took off at 135 deg. I like mine a little rarer but the Misses likes it better this degree of doneness. A very tender and tasty cut of beef. All was yum-JimZ
