Yea, it's been quite warm lately but, it's always a good time to enjoy a good gumbo. I decided to make a Smoked Duck and Andouille Gumbo so, I smoked a duck in my electric smoker the other night. Today I finished putting it all together. Before smoking the duck I put it in a pot of low boiling water for about 10 minutes to render off some of the fat and get a good stock from it. I used the fat(which was about a cup and a half)to make the roux. Boy, did that smell some good! All the seasoning chopped along with the shredded duck, andouille and some diced tasso. This is the roux before it was completely done. Done!

I made smoke chicken and sausage gumbo this weekend also. My so call good friend scolded me when I told him I used creamed cooked white bean as a thickener for the gumbo. First time I ever did this. It worked some what and tasted fine. I only added about 3 cups to 3 gal of gumbo.

My so call good friend scolded me when I told him I used creamed cooked white bean as a thickener for the gumbo. I can't imagine your wonderful, fantastic good friend would SCOLD you. Maybe he just had another solution to your problem. Btw, no pictures of this good stuff? Hmmm.... It might not have happened! ;D

That looks delicious. That gives me a great idea on what to do what some of my muscovy ducks in my chicken yard after I process them.

Looks good, I have never had gumbo coming from the west coast but it looks like I may have to try a batch myself, only problem is I would not know if it tatsed right or not
