For dinner this past Sunday I made Sausage Creole with my home made fresh Spicy Kielbasa. I start by sautéing the sausage in olive oil. I then add a little bit of beer to cook at a low temp. very slowly covered. You don't want the sausage to boil and push out all the liquid drying it out. When I think it is done, I will remove the sausage to a plate, and cover with plastic wrap till later. While the sausage is cooking, I start cutting up all the seasonings. Onion, green bell pepper, celery, and lots of garlic. I forgot to take a photo of the sauce cooking. But after I remove the sausage I added the veggies to sauté. Then a can of no salt diced tomatoes, thyme, fresh bay leaf, and ? After the sauce cooked for a while to blend the flavors, I cut up the spicy fresh Kielbasa to add back to the sauce. Fast forward and it is time to chow down. Brown Basmati rice, roasted asparagus, and buttered bread on the side. Yea baby that was some good, and left overs are even more better.
