This was going to be Pizza Sunday, but football got in the way. So Monday it was. Friday I made the starter with 1 cup of beer, 1 cup of KA whole wheat flour, pinch of yeast, and a pinch of sugar. Saturday I made the dough ball with the rest of the ing. 2 cups KA bread flour, pkg. yeast, tsp Kosher salt, 3tbs olive oil, and 2tbs of honey. In the mixer all of this went. I add a little more liquid as needed to form the dough ball. After mixing, a little stretching and folding by hand, and the dough ball is formed. This will go back into the greased bowl, and in the fridge till Sunday morning.
Well Sunday I deflated the dough. But football got in the way, so I shaped the dough back into a ball, and back in the fridge till Monday morning when I'll take out again to rise some more. Later in the day, Lookin good.
I divided the dough in half for a NY style pizza. This half will make the pizza. The other half I set aside to make some Ciabatta rolls. This dough has a great feel to it.
Fast forward to making the pizza. Got almost a nice 12-13 inch circle dere.
Home made sauce goes on next. If you don't make a good sauce, you won't have a good pizza.
Now the rest of the kitchen zink. 6 ounces, smoked provalone, 8 ounces fresh mozz, onions, red bell pepper, garlic slices, mushrooms, black olive, Andouille sausage, and home made beef Italian sausage. I didn't have any ground pork in the freezer.
In and out the oven.

This was a really good pie. Sauce was just right. First time using beef to make Italian sausage and it was good.
