I was planning to cooked this loaf Sunday. Had the mix made, with double ground bottom round, onions, garlic, red bell pepper, lots of fresh and dried herbs, Romano cheeze, egg, and fresh bread crumbs.. But between watching the Saints and snacking, the meatloaf mixture stayed in the fridge till Monday. I forgot to take a photo of the loaf out of the oven. Here it is served. Came out pretty good. Corn on the side. Home made bread and butter. Marinated grape tomatoes. Mashed potatoes with a paprikas beef gravy.
