I was in the mood for a nice pot roast cooked in Italian tomato sauce lately. For the sauce I took out some garden Roma tomatoes from the freezer. After they defrosted, I peeled them, and used a stick blender to coarsely chop them up. I got the sauce started ahead of time. Lots of garlic, onion, oregano, fennel seed, and fresh and dried Baby Bella mushrooms in the sauce. I will let this pot simmer for a while to thicken a bit. About a hour later it's time to get the sirloin roast ready. This piece of beef looks good. Not fatty, and some nice marbling. Now to get this roast prepped. Just Kosher salt, and fresh ground black pepper, both sides. Of coarse I got to stuff the heck out of it with garlic. After I browned both side, I added the tomato sauce, more garlic, and more mushrooms. I covered the pot with a lid, and into a 225 degree oven for a 1 1/2-2 hrs. Out the oven. The last half hour I got the pasta made, and some spinach for the veggie. I'll slice this baby up a cross the grain, and add back to the pot to simmer a little more on top of the stove. Time to eat!!! Dang good meal. The roast was nice and tender. I see a Italian Roast Beef Poorboy in the future.
