Friday, I took the bird out of the freezer to defrost in the fridge for Sunday's dinner. Didn't do a lot to it seasoning wise. I gave it a wash with bottled lemon juice. Let that soak for a while. I then dried it off a little with paper towels. The only seasoning I did was I made a crushed garlic and butter that I stuffed under the breast skin, and rubbed all over the out side. Half a lemon in the cavity, and just Kosher salt, ground pepper on the out side. In to a 450 deg. oven. Then turned down to 350 deg. until done. Here she it out the oven, and looking pertty. While the bird is resting, time to make some mushroom gravy with the dripping and brownings. I had some chicken stock I made out the freezer to deglaze the pan with. Now it is time to sit down and eat. Leg quarter, mashed potatoes, honey minted peas, and yes mushroom gravy. A very nice simple meal. I was full.
