A Swimp Poorboy has been on my taste buds, and mind for a little while. Friday was time to quench that desire for dinner. I made a 6 inch poorboy. Home made tartar sauce on the bottom half. That will be a resting place for the fried shrimps. Mayo on the top half. First batch is frying in the steel round bottom wok. First batch of fried shrimp is done. Nice gold color there. Now to build the poorboy. A few shrimp to start off on the bottom. Next tomatoes, and pickles. Forgot to take a photo of cabbage slaw that went on next. So fast forward and time to eat this bad boy. Not too bad of a Swimp Poorboy, if I might say so my self. Nice crunch on the corn flour coating.

Good looking sandwich Jim!!! I'm going to have to check the freezer for some shrimp now!

Thanks, Nate. Yea ck. out that freeze. Every one needs a Swimp Poorboy in their life every now and then.
