For dinner the other night I decided to make a Pork Fajita. Something simple and quick. I took a semi frozen boneless 5 ounce +- pork chop, and cut it into 1/4 inch strips. Just a simple marinade of soy sauce, lime juice, cumin, granulated garlic, and a little hot Hungarian paprika. While that is marinating I cut up some veggies that will go in the fajita. Just before I stir fried the pork strips, I added corn starch to the marinade, and mixed well. I wanted some sauce. The pork is finish frying and lets put this guy together. Pork goes on the bottom of a warmed whole wheat flour tortilla. Some red onions, and cherry maters on top. Next some sour cream. Then some shredded cabbage. All rolled up and ready to eat. Garbanzo Bean salad on the side. Just a lite, simple, and tasty meal.

Looks tasty Jim! I'll take one with refried beans and shredded cheddar cheese.
