I have had meatballs on my mind all last week. Waking up Sunday I knew my mission was to make Meatballs to go with home made whole wheat pasta for Sunday's dinner. I made the sauce with some of my Roma tomatoes that I had in the freezer. Meatballs was 1 pound double coarse ground chuck, 1/2 cup home made dried bread crumbs, egg, S&P, lots of minced garlic, parsley, graded Romano cheese, and a little hot pepper flakes. Peas, and Italian bread and butter, and more grated Romano cheese. Let's eat. I like lots of garlic in my sauce. I even add whole garlic cloves for a special treat. The whole wheat pasta I rolled out to #5 on my machine. Those are some nice spicy meat a balls. Delish meal if I must say so myself, and left overs will be more better!!!
