Made this loaf of Italian Seeded bread last weekend. Made the starter Saturday, and the loaf Sunday. For the starter I used one cup of unsalted potato water. I cooked some potatoes a while back with a mix of water and milk. I saved 1 cup and froze for future use. In the potato water I added one cup of white whole wheat flour aand a pinch of yeast. Next day, Sunday, I made the loaf. After mixing, kneading, and rising, I shaped the loaf for final proofing. Next, time to coat the proofed loaf with sesame seeds and slashed. Ready for the oven. In and out the hot box, here I am! The nose is the best part. Monday Morning and time to see inside. Nice crumb and crust. Butter, where's the butter. Let's see what the nose taste like. Shark Attack!!! Had a few good sammies already the past few days. Italian Seed bread makes some of the best toast.

Good looking loaf of bread there Jim!!!! I thought about doing the same thing the other day but opted to just go buy a loaf of St. Joseph bread at Dorignac's.
