Made this bread last weekend.There is no rye in the bread, just white whole wheat I used for the starter, and bread flour for the finish loaves. Once again I made the starter Friday, and Saturday I made the bread dough. Here is the bread dough after i finished kreading. Put the dough in the bowl and covered with plastic wrap and it goes in the ice box till Sunday Morning. Got a nice little rising going on over nite. Sunday morning out the fridge. Sunday around 3 Pm I started punching down the dough. It rose till the peak of the dough was just touching the plastic wrap. Fast forward, and out the oven. I brushed on a egg wash and added more caraway seeds before baking. Now for the taste test after the loaves cooled down. Came out pretty good. Nice crumb and chewy crust. Made good lunch sandwiches for work this week. Yum. PS: I used beer for the liquid in the starter and butter milk for the final dough.
