Again, I used "King Arthur's Ciabatta Roll" recipe, tweaked. Trader Joe's white whole wheat flour and pineapple juice for the starter. For the rest of the moisture in the recipe I used butter milk. In the dough I added millet seed, mustard seed, sunflower seed, dill seed, caraway seed, and dill weed. Dough ball is made and will go back in the bowl and in the fridge over night. Next day, after about 6hr on the warm porch, I turned the dough onto the counter, for some gentle stretching and folding. After the loaves are formed and proofed, I did a little dusting with flour and slashed the tops. Ready for the oven. Let's go. Bread is done and looking good. Nice hollow sound when tapped on the bottom. Now to decide which one to eat first and which one goes in the freezer for latter. PS: Nate, after I form the loaves I cover them with plastic wrap and keep them between boards so they can only rise up when proofing. I guess you could use loaf pans for the same result. After the loaves have proofed, turn them out onto the counter gently and free form the loaves. I'll have to try that next time to see if it works.

Georgia, guess you got your answer to my other bread/sandwich post in "What Cooking at Your House". Another good place for bread recopies is "The Fresh Loaf" forum. I'll start walking to Abita Springs with a loaf, Georgia, LOL.

Your welcome Georgia. Now for the bad news. I was half way, walking over the Causeway, To Covington, when the Causeway Police stopped me. They confiscated the loaf of bread. I thought they only went for doughnuts. Another tweak to that recipe, I add 2 TB of honey, and lesson the salt a little. It's a good basic dough that you can play around with. Got to get myself to make the rolls.
