Charcoal-grilled this 1.3#er last night. Marinated in beaucoup salt and sugar, soft butter with crushed peppercorns on one side only. Hit the pepper side hard and a flash on the other side. Set off to the side of the pit with some Pecan smoke going. Nursed the meat temp up to 125F real slow. Too bad that I had to split the thing with da Warden !
