I have got a lot of dill growing in my garden, so I guess I should I should make some Dilly Bread. I made the starter Friday. 1/2 cup rye flour and 1 cup white whole wheat flour, 1 cup of potato water, and a pinch of yeast. This what it looked like Saturday before making the dough. I might not use all of this dill, but. Dough ball is made and will go in the refrigerator till Sunday morning. Besides the fresh dill, I added dill seed and caraway seed to the dough. I used yogurt whey for the rest of the liquid. Sunday morning out the fridge and looking good. Sunday afternoon and a good little rise. That is a 7 quart mixing bowl. I thought I took photos of shaping and slashing, but not. Out the oven and cooling on the rack. Brushed egg wash on top and added more caraway seeds before going in the 425 deg oven for baking . Taste test tomorrow morning.

Those are two beautiful loaves of bread! So how does dill bread taste? I might have to give that a try.

Thanks for the comment Nate. How does it taste? I want to say the dill gives it a sort of rye bread flavor. The dill seed is stronger then the dill weed and I like that. Of course my dill weed is still very young plants. The tang/sourdough taste I got from the bread might of been from the whey from yogurt cheese I make. I bag up the whey in 1 cup lunch bags and in the freezer. I did make a mistake. The potato water I used had salt in it. I think it retarded the starter a little. Not enough to ruin the bread. I boiled potatoes Saturday night and did not add salt to the water. Have that water bagged up and in the freezer for future use. Well any ways this is what the sliced bread looks like. Ate those slices with butter for breakfast. And my young dill forest growing among the mint. This is good tasting bread Nate. Here is a link to the King Arthur Ciabatta Roll recipe that I use as a base and I tweak a little. www.kingarthurflour.com/recipes/ciabatta-rolls-recipeThe dilly bread would make some good hamburger rolls too Nate. For last night dinner, I took a 1/4lb ground chuck patty out the freeze and shaped the patty to fit the bread slices. Pan fried the burger on the stove. That was a good dinner sandwich.
