You're right, it does kind of look like brie but, you're wrong. Not brie. I will say this, it's something I hadn't seen in a long time and I searched for this particular item for a long time. The last time I saw it it came in about 2 ounce packages. this is a 1 lb block.

Lard could be another one of the ingredients in the final product but, no lard is not the answer.

Not butter! It's packaged in size and weight the same as a one pound block of butter though.

That is actually fresh yeast(cake yeast). It's used for making bread just as you would use dry or instant yeast. I hadn't seen it in at least thirty years. I remember when I was a kid and we would visit relatives in the country. Evergreen, Pineville Cottonport, Bunkie and Hessmer Louisiana. Whenever we would go to visit they were ALWAYS making homemade bread and what they used was fresh(cake)yeast. The reason they call it ckae yeast is that it would come in premeasured packages of about two ounces and was sectioned in little cakes of a little more than .5 ounces per cake.
I had been looking for this stuff for years, even when we would go to visit relatives as little as two or three years ago. I happened to come accross it at of all places Restaurant Depot. I think it's a seasonal product made mostly in the Fall and Winter. This is actually a one pound block and it's made in Canada. Now, I bet you know something you didn'tknow before and it is used to make something we all love to eat. Fresh homemade bread!
Now I just need to find the time to make some homemade bread.
