Venison Kielbasa Recipe 24 hour campfire
Trust me, I've probably made over a thousand pounds of this Polish recipe and it's good.
5 lbs Meat 4t Salt 2T Sugar 4t Mustard Powder 2t Pepper 2t Garlic Powder 2t Marjoram
I do half pork butt, half venison... My Brother has me grind in a pound of fat he gets from the butcher. He swears the fat covering the ribeye roast is the best and buys it special. I don't add any more fat than the butts have. I do wet the spices when I put them in though. For every 5 pounds, maybe a half cup of water or so. I run the meat through the coarse grinder plate, mix it up with spice and run it through again. I buy hog cases, soak them overnight if I can, and stuff them. It turns out to be about a pound a foot. I also pack one pound bags of bulk for patties. The guys fry it, boil it, and grill it. I think it is best on the grill. _________________________
