This bread making was a 3 day process. Got the starter made on Friday. Starter is 1cup whole wheat, 1/2cup all purpose, 1cup whey from making yogurt cheeze, and a pinch of yeast. Put the starter away in a warm place till tomorrow. Saturday afternoon the starter is ready to make the dough. Nice and alive! Got the dough ball started. Going to let it rest for about 45min to let the flower absorb the liquid. I used Brown's Dairy Bavarian Butter Milk for the rest of the liquid. This dough ball is smooth as a babies bottom. Time to put the dough in the ice box over night, covered with plastic wrap. Sunday morning out the fridge and back out on the porch to slowly warm up andrise a little more. Here we go, bread is out the oven and looking YUM! YUM, YUM, YUM!!!!!! This bread had a nice chewy crust and soft crumb. I am going to have some good lunch sammies and breakfast toast!!! -JimZ
