Happy first day of Fall!!! Yep, today is the first day of Fall and what better way to celebrate than to cook something outdoors Okay so the temperature isn't exactly what you want for Fall yet but, it's supposed to be a little drier this weekend with less humidity. Tonight I'll be grilling some burgers from a nice chuck roast I ground last night. I thought about boiling some crabs tomorrow afternoon but, that's still up in the air. No problem they are plentiful right now anyway. For Sunday I'm going to be cooking a 12 lb turkey. I haven't decided yet whether to cook that indoors or in the smoker. Other than that I might make a chocolate cake sometime tonight or tomorrow.
So, what ch'all cookin' and eatin' this weekend?

Well, this evening I grilled burgers from that chuck roast I ground last night. I keep saying this more and more lately but, THESE really were the best burgers I've done yet. Before grinding the cut up roast I seasoned it with sea salt and black pepper. When I got home these evening I first lit the Royal Oak Steakhouse lump charcoal and then came back inside and made the burger patties. All I added was a little "Try Me" Bullfighter Steak and Burger Sauce. Then I put a pan on the grill to carmelize the onions with some worchestershire sauce and a little hot sauce. as that simmered and reduced down I added a little beer and let then get all good and tasty. When the onions were done I put the burgers on the grill(Primo Jr tonight). Having cleaned the grates realkly good and spraying with a cooking spray kept from getting that crispy char that's so darn good but, the burgers came out fantastic!!! A little butter on the buns and toasting just ever so slightly made them absolutely perfect! I don't put the cheese on the burgers until I take them off the grill and then just cover them for a couple of minutes and this makes for perfection of melted cheese on a burger. The onions when just put on the grill Just right All said and done there was only one of these left. Where'd they go? Okay, so I was really hungry after slaving over the grill but, they really were fantastic!!! While all that was going on I was also making a batch of a simple BBQ sauce we really like here. Here's a hint, Bud's Broiler! It's still simmering and smelling great.

Good lookin Burgers Caj. Got love them onions.. Never seen a plastic thing like the one that holds them coldies together, Is that new or is it just that company that uses them?

That is terrible Nate. Terrible that I am not there chowing done on one of those beauties. Nothing better then grinding your own meat ;D-JimZ
