This morning I finished picking the peppers that were left in the garden and this evening I cleaned and chopped them up to make a pepper relish I haven't made in a long time. I'll finish it up tomorrow evening. The peppers I had left were jalapenos, serranos, cayenne, a couple of small bell peppers, tabasco and bird peppers. By the time I added finely chopped onions and carrots I have close to a gallon of just pepper relish alone not including the vinegar I'll cook down to add to it tomorrow. I'll use the bird and tabasco peppers to make a pepper vinegar hot sauce in a few hot sauce bottles I saved from past use. This morning as I was picking the peppers(bare handed)I looked at the bird peppers and thought "these little things can't be that hot(I haven't used them yet this year)"so, I bit into the end of one and nothing. I took a second bite and wow!!! they pack a mighty heat in those little things!!!Lol........ My mouth and lips were on fire for a good hour. Never underestimate the size of the pepper.

I finished the hot pepper relish tonight, made the bird pepper vinegar sauce and even reconstituted some tabasco pepper vinegar I had drained of the vinegar. I ended up with eleven 1/2 pint jars of pepper relish. This stuff will make for some really good jerk marinade. I added some very thin sliced garlic to the mixture tonight. Now the wait is on for at least 3 weeks of letting it get good and pickled.

Man, the next three weeks are going to be really long. I brought a couple of jars of this hot pepper relish to work to give to a couple of friends and I put them right where I see them almost all day. Since I put a self imposed 3 week time frame before trying it time is going by extremely slow. It's only been two days but, feels like twop weeks already. I hope I can make the 3 week wait.
