This is the bread I made last Sunday for the week brown bag sammies. Tried something new from reading other bread making sites. I used pineapple juice for the liquid in my sponge. Got the sponge ready for a over night stay on our hot, humid air. To the screen porch it goes. 24 hours latter Mr Sponge is ready. I added some seeds/grains to the dough mix. I threw in dill seed, flax seed, black mustard seed, and oatmeal. Dough is risen and ready for shaping and another proofing on the porch. Loaf is nicely proofed and ready for the hot box. Out the oven and looking good. After the bread is cooled down I got it all sliced and ready for my lunch sammies. I have to say this bread was one of my best. Every bite into my sammie was a pause to think about the essence of this bread. Some loafs are better then others. This one was a surprise -JimZ

That is a beautiful loaf of bread! It looks like you've made it to the "pro" level of bread making Jim.
