I have a friend who is diabetic and he inspired me to make this bread because I wanted to share some of my home made bread with him. I make bread fairly often and this is my first try at almost 100% wheat bread. King Arthur's Rustic Sour Dough Bread recipe calls for 5cups of white flour. I used 4 1/2 cups King Arthur wheat flour and and a 1/2 cup rye. To the dough I added oats, dill seed, flax seed, mustard seed, and toasted almonds. First fed the the starter the day before and it is looking alive Get the almonds toasted Quick coarse chop Here is the bag of flour. You can buy it at Winn Dixie Mr Dough ball is ready. Went in the ice box to rest over night. Took out first thing AM to rise. I have to say I had some nice sandwich and breakfast bread this week I also made my friend very happy. He loved his loaf. Now I am in trouble with his wife because he wants her to start making this bread ;D-JimZ

Very nice JimZ, Ive tried a couple times to make sourdough starter and it must be to cold in my house cause it never bubbles.

That's a fine looking loaf of bread there Jimbeaux! I think I'm feeling a little diabetic myself. ;D I might have to do a lil bread making myself this weekend.
