I rejuvenated my sourdough starter yesterday and set some aside for baking today. Made 2 boules with some grated extra-sharp white Cheddar mixed in. One loaf went to our neighbor who takes care of things when we're traveling. The other is cooling and waiting to be sampled for tonight's dinner of crawfish étouffée rerun. Sure smells good in our house!

Georgia, I will have to make some sour dough bread soon. Always love making two loaves of bread at a time. One for me and one to give away. I know you made a neighbor happy.

The most fun was using the "proof" cycle on my new ovens. Set for 85 degrees; out of the drafts...then got the other preheated to 425 while the dough stayed warm in the proofing oven. Cold weather always seems like the time to bake bread, but the house is cooler and it takes longer to rise. This was perfect! Can't wait for some REAL cold weather now. I see lots of bread in our future.
