Last night I baked a cake for my youngest daughter who's birthday is today. I decided on a Red Velvet cake with cream cheese frosting all made from scratch. You know how some recipes aren't enough to fill the cake pans enough to make full layers? I hate that! So, I made two batches of the recipe and used 10 inch cake pans. It's never a problem to me if there's too much cake batter left because the cupcake pans are in a convenient place to grab and make cupcakes. Besides I have to go by one of my accounts this morning and I know they will love having a nice cupcake for a snack today. Cream cheese frosting made and colored Got the first layer trimmed, cooled and ready to begin. Filled and second layer in place Alright now I NOT the greatest when it comes to decorating cakes and I didn't mean for this to look exactly perfect but this actually isn't too far off from what I had envisioned it to look like as a finished product.
