It hasn't been all that cool but the couple of small cool fronts that have gotten here and left too quickly means it's getting to be that time to make some good homemade sausage. We're supposed to have a few days of cooler weather next week so maybe that'll spur me on to make some. I like to make sausage when the weather is cool compared to when it's 98* outside. I can't explain exactly why but that's when I like to make it most. Proably going to start with spicy Italian sausage and a maybe one or two others. I do have something else I want to make and might start that sooner. I feel like it's time to make a nice spicy pastrami or two. I'll pick up the meat for that real soon and get that started by this weekend. I love a good hot and spicy pastrami sandwich. Mmm... Mmm... Mmmmmmm.......

That pastrami sounds very good -JimZ Yeah, as much as I'd love a nice piled up sandwich of it right now I need to wait about another week or so. I figure that by the time I brine it and get around to smoking it I should be able to eat it by then. I might stop in at Restaurant Depot to see what the meat there looks like for it.

Great idea. I'll have to make a strami now too. I've got friends that will kill for my strami so I might need to make 2 briskets.
I've heard of them made from a cut called beef plate but I've never seen it. Anyone else?
