Ah the love of making bread ;D!! Vindi can I borrow your new cook book for a few months. I promise I will give it back . Did something a little different. I combined a ciabatta bread recipe with my Italian seed bread recipe. This made the dough a little wetter. The result is that the loaf flattens out a little as it bakes. The recipe calls for a starter to be made the day before. Had this starter on my screened in porch over night covered with cheeze cloth. With our hot humid nights conditions were good to capture some SE Louisiana wild yeasts. Here it is the next day. I have been using fresh yeast the last few months. Weighed it out on the scale to get the right ratio to packet yeast. Good stuff. Mr Dough Ball is ready to go back on the porch to rise. Perfect temp. out on the porch. Another good rise after about 1 hour/hour and a half. The camera's cold lens fogged up going out into the heat. Formed the loaves, proofed them on the porch, then seeded and slashed before going in the hot box. Here we go, out the oven, looking yum! Bread is sliced up for my lunch and breakfast toast. The second loaf I shared with a fellow co-worker. Got a big smile from him. Remember it is just as easy to make two loaves as it is to make one. Love to share ;D ;D ;D-JimZ

That looks absolutely FANTASTIC! Gotta send you a point for that one. I bet it was delicious.

Thanks Guys!. Nate I thought about it later after I gave one loaf away. I should of called you and we could have met for lunch and made a big Muff out of one loaf. Have to keep that on the radar. Vindi, you could make a sun oven with that heat!! Can't wait to see some of your breads coming our way with that new cookbook. Have a good weekend friends, TGIF ;D-JimZ
PS: The loaf I gave away was to one of them dere Italians working on the job. Got some really good thumbs up and smiles!
