Yeah, some will say it's too hot for gumbo in the summer but as long as I enjoy something and have air conditioning I will not hesitate to make a good gumbo during the summer. This morning the carcass from a turkey I roasted a few days ago went on the stove for a slow simmer to make a nice stock. Meanwhile I chopped up seasonings and cut up andouille, tasso and smoked sausage. When I started cooking down the seasonings I got a roux going. No after picture of the roux but it was the perfect color for a good turkey gumbo! Everything in the pot for some simmering til done how I like it.

Annnd....... it's done! Actually it was done about 1:45 pm. Got some rice on cooking right now.

Looks mighty tasty, Nate. I see nothing wrong with having soup in the summer time. I don't eat soup steaming hot. So there you go. Soup/gumbo is good in the summer time. I'll take a bowl of that turkey gumbo, yum!
