This weekend I made a loaf of Italian seed bread for my work lunch sammies. Saturday morning I made a starter with white whole wheat flour and unsalted potato water. Saturday afternoon I made the dough. Sunday bread time. Punched down the dough, a little kneading, and folding and stretching, and I have a log formed for final rising. I'll cover the dough with plastic wrap while it rises. After rising I coated the bread with egg white and lots of sesame seeds. Slashed and ready for a 425 deg. oven. Out the oven and cooling. Monday sliced up a few for breakfast. Nice crumb and crust. Need to make some toast with butter and jelly. Yum.
