Whoops I did it again. Second weekend of a small batch of that good stuff. Got the seasoning blend made up for this old recipe with some fresh sage as well I like to add extra sage and cayenne powder and crushed red pepper. Mr Boston but is ready for some carving The test patties tasted good, links look pretty good Vindi time to make some good stuff,Bratts :)Jimz

Looks great. I'm still trying to learn how to get the casing open. Rinse 10 or 12 ttimes and the stink is still there. Yet to figure out where the end the casing is at. I've got a long hill to climb before I can get my pics to look like that.

Vindi, yes you could make this recipe into small links or small patties for breakfast sausage, but these bigger guys are great dinner sausages. Somehow Country Sage Sausage has been marketed into a breakfast sausage when it is much more then that Rh, I do not know your source of casings. I have never had a problem with a off smell. I soak mine in a bowl of water after rinsing all the salt out multipull(sp) times. The part that can be hard is finding the open end of the link. How did the Romans do it so fast when they were in a hurry for for . Whoops-JimZ Ps: Rh send me a PM on photo taking. Maybe I can help.

Jimz That's funny about the Romans. Anyway when and I really don't know when I go to use the casing again I'll send ya a pic. I have two casing packs right now and they are vacuum packed. My next project is going to be 10 1lb summer sauage casings. These casing are all together different. I'm not going to start that until around the 19th of Dec. Hopefully they will come out ok and I can give them away as Christmas stocking stuffers. ;D
