We're having a lil contest here over the next several days. Beginning this morning thru noon Wednesday 11/16/11 all you have to do to qualify is post something you love about Louisiana under this topic. It can be about a visit you made here, a favorite food from Louisiana or anything as long as it is something positive about Louisiana. The prize will be a brand new copy of one of my favorite cookbooks. It's called "Tom Fitzmorris's New Orleans Food". It has some fantastic recipes and anyone who loves Louisiana/New Orleans food will love this book. This is a newer revised edition than the one I use and love. I may even(if time allows me to)try to get it autographed by him for the winner. Come on now and post something and if you're not a member here, it's easy to sign up and become a part of Eatin' Louisiana.

When I get to New Orleans I love to eat in the French Quarter and drink beer from plastic cups on Bourbon St ;D

I here ya!
My company transferred me here back in October of 1998. I settled just north of Baton Rouge and set forth to make it my new home. WOW! Way different than Texas was. I love this State now and have made many friends.
When I moved here there were only two bbq comps, today there are over 17. Louisiana is all about the family and food. I can't count the number of invites I have had to join a family for their outdoor get together and they accepted me as one of their own.
It's just amazing to see a gathering of 40+ people all having fun and watching the designated 'ONE' dump out 200lbs of crawfish or a line of people doing their part in butchering a hog or loading a pit full of meat for a crowd. Aside from that there is always some kind of festival going on somewhere and it's only a short drive.
I like it here and plan to stay.

When ever I go to Louisiana I usually bring back Andouille, Boudin I like Crayfish the best and at least one good cook book. Best of all some great memories of the great food there.

Louisiana has always been my favorite state and living in the DFW area of Texas puts me close. Each year we make several trips there to enjoy all it has to offer. Louisiana has the perfect combination of wonderful people, the best food in the world, a rich colorful history, and beautiful scenery. Over the years flying with the A 26 doing airshows, Barksdale AFB in Shreveport and NAS in NOLA were always the 2 top shows we did. The New Orleans show was always at Halloween. As part of our appearance fee we would get the airshow coordinator to agree to pay our rooms and rental car starting the Monday before the airshow. This would give us a whole week to drive around to see the sights, party and enjoy the French Quarter during Halloween. Checking out old cemeteries is cool too! A great book to read about New Orleans is Frenchmen, Desire, Good Children by John Chase. We also enjoy Shreveport too and love going to Holiday in Dixie festival each spring. Reminiscing has worked me into a craving: Gumbo Smoked Quail Breast & Andouille Gumbo. The best rue pan is the old Wagner 1218 square skillet. Seasoned 1.5 lbs of quail breast with Mamas and smoked them using wine barrel wood. The andouille is from Jacob’s.

One of my favorite memories about Louisiana, NOLA in particular is when I was growing up.
My dad used to moonlight at a reception hall that hosted weddings, private parties etc. He worked there on Friday and Saturday nights to make extra money. Anyway, about once a month, he'd come home with a couple of dozen piping hot Manuels' Tamales fresh the cart. He'd stop on the way home and pick them up. He would always let me know in advance so I wouldn't go to sleep to early. Then, he'd get home around midnight and him and I would sit down together and scarf them down. Man I miss those tamales and those days.

Having never been to the State of Louisiana. I get to enjoy living in the State of Louisiana via a couple of fellas I call friends. Nate and Ron. Who supply me with a healthy dose of Cajun/Creole recipes.

As a Louisiana gal, now in the Panhandle of Texas... I miss the Trees... Water ways ...be they... cricks, creeks, bayous, Gulf, or lakes. But the biggest thing I miss is all the flavor of the foods. From seafood, chicken, beef...
But I will be going back for Thanksgiving.. And we are having Smoked Turkey Gumbo.

I would love to say something really great about Louisiana but I can't because we've never been there. I will say one thing you all got a good person in Canj. He's showed us a lot of great cooks and will hopefully continue to do so. From what pics I have seen on here and TV Louisiana would really be a great place to visit just never got a round to it.

Thanks guys. I was born in Buffalo and live in NC but I do make gumbo and crawfish ettouffe, although in the last few weeks I haven't been able to find the frozen crawfish tails in the local store that they've carried for years.
I'll definitely post some pics of the cooks from the book

Your book shipped out today. You should get it on Monday and I've included a lil something extra that we call "lagniappe" here in Louisiana.
I can't wait for you to get it and start cooking something from it!
Everyone should know that I could just pick anyone at anytime to sned something to if they are active members(posters) .on Eatin' Louisiana.
