Last week a local supermarket had pork butts on sale for $1.29 @ lb and I procrastinated going to pickup a couple BUTT, that's alright. This week another local supermarket(Rouse's)has butts on sale for $1.00 @ lb. So, I went today and picked up 40.3 lbs of very nice looking pork butts. I'm definitely going to be working on some homemade sausage this weekend. Not sure about what kind or how much yet BUTT, there will be homemade sausage soon!

Nice deal on the Butts for sure!!! Speaking of Sausage, I got a new book in the mail today from Amazon.com. I love Geneo Salami and havarti cheese and want to have a whirl at making my own. I browsed the recipes in the book and saw "Salami NOLA" Was wondering if thats a Louisiana dried sausage type. Wish I had 40 pounds of Pork butt ;D

I don't have an answer for you on that one Key. I don't find anything on it being related to NOLA. I'm not sure if we can make fermented sausage down here with the heat and humidity. without having a special made chamber just for that. I'd love to do it though. I will be trying my hand at homemade andouille soon. I'm thinking about doing some Italian sausage this weekend. If I had the room in the freezer I'd go and get more butts.
