Georgia this is very very very good recipe. I followed your recipe to a tee, almost. I did not have shortening so I subed olive oil, and subed two cups of whole wheat for white flour. Also used beer for the liquid instead of water. Here are the ing. lined up and ready to go. Oats are in the mixing bowl waiting for The beer that was boiling, and the honey and molasses. Now this is a pretty dough ball. Good feel to it while kneading. Such a stress reliever, LOL. All done rising and ready to be divided in to two loaves. After proofing and slashing the loaves are ready for the hot box. 30/35 min. later and Sliced up and ready for my brown bag sammies. Georgia I made these loaves last Sunday. The crumb was perfect for sliced bread and it did not get the crumbles after a few days. Thank you -JimZ

Wow! Mine never looks that good! I bake it in pans, though...love your substitutions...have give them a try!
